  • After the final set of folds, let the dough rise until it has roughly doubled in size, which can take anywhere from 4 to 12 hours depending on the temperature of your kitchen and the activity of your starter.
  • Once the dough has risen, gently turn it out onto a lightly floured surface and shape it into a round loaf.
  • Place the shaped dough into a well-floured proofing basket or a bowl lined with a clean kitchen towel dusted with rice flour or cornmeal.
  • Cover and let the dough have its final proof, which can take 1-3 hours. The dough is ready when it looks puffy and is slightly springy to the touch.
  • About 30 minutes before baking, preheat your oven to 450°F (230°C) with a dutch oven inside.
  • Once the dough is ready and the oven is hot, carefully turn the dough out onto a piece of parchment paper, score the top with a sharp knife or lame, and gently place it into the hot dutch oven.
  • Cover with the lid and bake for 20 minutes, then remove the lid and continue to bake for another 30 minutes until the bread is deeply golden brown and sounds hollow when tapped on the bottom.
  • Remove the bread from the oven and let it cool on a wire rack for at least an hour before slicing.
